A hearty chilled soup featuring black beans with vegetables, perfect for warm weather. Adapted from Vegetarian Times Magazine.
Ingredients
2 cups dried black beans, sorted and rinsed
6 cups vegetable broth
2 large onions, finely chopped
1/2 cup celery, chopped
1/2 cup carrots, chopped
1 tablespoon lemon juice
Optional garnishes: chopped cucumber, chives, bell peppers, tomatoes, croutons, thin lemon slices
Instructions
1. Soak beans for 1 hour after boiling or overnight. Drain and rinse well.
2. Place beans in a saucepan with stock, onion, celery, carrots, and lemon juice.
3. Bring to a boil, then simmer slowly, partially covered for 2 hours.
4. Puree vegetables and beans with the liquid.
5. Reheat to a simmer or chill. Adjust seasoning to taste.
6. Add more stock if too thick.
7. Ladle into wide bowls and serve garnishes separately.
