Savory tart with cumin-spiced black beans and tofu in a crispy cornmeal crust. Roasted garlic adds depth!
Ingredients
Crust:
1 cup cornmeal
1 cup white flour
1/2 teaspoon salt
1/3 cup water (adjust as needed)
4 tablespoons ice water
Filling:
1/2 lb soft tofu, drained
1/2 teaspoon cumin (or more)
1/4 teaspoon pepper
1/4 teaspoon cayenne
2 cups cooked black beans
2 tablespoons onion, minced
6 cloves garlic, roasted
1/2 cup corn kernels for garnish (optional)
Instructions
Crust:
1. Combine cornmeal, flour, and salt. Drizzle in water, mix until crumbly.
2. Sprinkle with ice water, form into ball. Wrap in damp towel, refrigerate 1 hour.
Filling:
3. Mash tofu. Stir in cumin, pepper, and cayenne.
4. Fold in beans (don't break them) and onion.
Assembly:
5. Preheat oven to 400°F. Press dough into 9" pie plate. Refrigerate 30 minutes.
6. Prick crust, cover with foil, weight down. Bake 20 minutes.
7. Remove weights and foil, bake 5 more minutes until dried.
8. Spread roasted garlic over crust. Spoon on filling.
9. Bake 15 minutes until heated through. Garnish with corn.
