A simple, protein-rich salad perfect for lunch or as a side dish.
Ingredients
1 cup bulgur wheat
1 cup boiling water
1 can (15 oz) black-eyed peas, drained
1 large tomato, diced
1 medium cucumber, diced
3 green onions, chopped
2 cloves garlic, minced
Juice of 1-2 lemons
1/4 to 1/2 cup chopped fresh parsley
1/2 teaspoon black pepper
1/2 teaspoon salt
Romaine lettuce for serving
Instructions
1. Pour boiling water over bulgur in heatproof bowl.
2. Set aside 20-30 minutes until water is absorbed.
3. In another bowl, combine black-eyed peas, tomato, cucumber, green onions, garlic, lemon juice, parsley, pepper, and salt.
4. Toss to mix.
5. Stir in the bulgur.
6. Chill before serving or serve warm.
7. Serve on a bed of romaine lettuce.
