Blackened Portobello Mushroom Salad

A hearty main-dish salad with cajun-spiced grilled portobello mushrooms.
Ingredients
4 whole portobello mushrooms
1 tablespoon Cajun seasoning
16 cups romaine lettuce or salad greens
1 tomato, cut into wedges
1/2 cup red onion, thinly sliced
1 can cannellini beans, rinsed and drained
Marinade:
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 cup tomato juice
2 teaspoons Dijon mustard
2 teaspoons stone-ground mustard
1/4 teaspoon coarsely ground pepper
Instructions
1. Combine marinade ingredients in a large zip-top bag.
2. Add mushrooms and marinate 10 minutes, turning occasionally.
3. Remove mushrooms, reserving marinade.
4. Sprinkle mushrooms with Cajun spice.
5. Grill or pan-cook mushrooms 2 minutes per side until very brown.
6. Cool and slice diagonally.
7. Arrange 4 cups greens on each plate.
8. Top with mushroom slices, tomato wedges, onion rings.
9. Sprinkle with beans and drizzle with reserved marinade.
