Striking blue cornmeal fingers that are broiled until crispy. A unique side dish!
Ingredients
1 1/2 cups water per serving
1 cup blue cornmeal per serving
Salt
Instructions
Day 1:
1. Boil water.
2. Slowly sift cornmeal in a stream while stirring (avoid lumps!).
3. Cook until meal loses grainy texture.
4. Pour moist but not runny mixture into parchment-lined square pan.
5. Refrigerate overnight.
Day 2:
1. About 30 minutes before serving, unmold polenta.
2. Cut into finger-length slices (4.5" x 1" x 1").
3. Salt all cut surfaces and bottom of each finger.
4. Place upside-down on foil or baking sheet.
5. Broil 4-5 minutes until beginning to brown or sizzle.
6. Serve with potatoes and dark green veggies.
