Blueberry Banana Polenta

Sweet breakfast polenta with fresh blueberries and bananas. Tastes like dessert!

Ingredients

2 very ripe bananas 1 cup corn flour (fine ground) 1/2 cup whole wheat flour 2 tablespoons honey (or 3 tablespoons Sucanat for vegan) 1/2 cup water 1 1/2 teaspoons egg replacer (or 1 egg white) 1/4 teaspoon guar gum (optional) 1/2 teaspoon baking soda 2 tablespoons nonfat yogurt 1/2 teaspoon cinnamon 1/2 teaspoon cardamom 1 1/2 cups fresh blueberries

Instructions

1. Mash bananas with potato masher. 2. Add all remaining ingredients except blueberries. Stir well. 3. Lightly oil an 8" x 5" pan or 8-cup muffin tin. 4. Pour batter into pan. 5. Sprinkle top generously with blueberries. Press down to submerge if desired. 6. Bake at 400°F for 25-35 minutes. 7. Serve warm - the melted blueberries become deliciously runny!
