Broccoli Pie

Rustic Italian-style double-crust pie filled with broccoli, potatoes, and herbs. Serve with marinara!

Ingredients

Pizza dough for 2 pizzas 1 lb broccoli, cut into bite-size pieces 1 1/2 lbs potatoes, peeled and boiled until somewhat soft Juice of 1/2 lemon 4 cloves garlic, sliced 1 teaspoon basil 1/2 teaspoon oregano Pasta/pizza sauce for serving

Instructions

1. Lightly steam the broccoli. 2. Cut potatoes into potato salad-sized pieces. 3. Mix broccoli, potatoes, lemon juice, garlic, basil, and oregano together. 4. Divide pizza dough into two parts (one slightly larger). 5. Roll out larger piece and place on pizza peel. 6. Top with broccoli/potato mixture. 7. Roll out smaller piece and place on top. 8. Roll lower crust over top crust edges and seal. 9. Bake at 450°F on pizza stone for 15 minutes. 10. Serve with pizza sauce.
