Broccoli Quiche in Potato Crust

Crustless quiche with a unique potato base. Even non-fat-free fans love this one!

Ingredients

1 package (10 oz) frozen chopped broccoli, thawed and squeezed dry 1 cup shredded nonfat cheddar or Swiss cheese 1 cup nonfat cottage cheese 1 cup fat-free egg substitute 1/4 cup finely chopped onion 1 1/2 teaspoons Dijon mustard 1/8 teaspoon black pepper 2 medium potatoes, scrubbed and sliced 1/4-inch thick

Instructions

1. Combine all ingredients except potatoes in a large bowl. Mix well. Set aside. 2. Coat a 9-inch deep dish pie pan with cooking spray. 3. Arrange potato slices in a single layer over bottom and sides to form a crust. 4. Pour broccoli mixture into the crust. 5. Bake at 375°F for about 45 minutes, until top is golden brown and knife inserted in center comes out clean. 6. Let sit 5 minutes before slicing and serving.
