Mexican-inspired pilaf with brown rice, barley, and green chilies. Cilantro-kissed!
Ingredients
4 cups vegetable broth
3/4 cup long-grain brown rice
1/4 cup pearl barley
4 ounces canned chopped green chilies, drained
1 tablespoon chopped fresh cilantro
2 teaspoons grated lemon rind
Instructions
1. In large saucepan, bring broth to a boil.
2. Stir in rice and barley.
3. Reduce heat to low. Cover and simmer 40-50 minutes until liquid is absorbed and grains are tender.
4. Let stand, covered, 5 minutes.
5. Gently stir in chilies, cilantro, and lemon rind.
6. Cook over low heat 1-2 minutes until heated through, stirring once or twice.
