Hearty pilaf with chewy wheat berries, brown rice, and savory shiitake mushrooms.
Ingredients
1 handful dried shiitake mushrooms
Boiling water to cover
1 cup brown rice
1 cup wheat berries
2 cups water
1/4 cup teriyaki sauce (like Yoshida's)
Instructions
1. Soak dried shiitakes in boiling water for 10-15 minutes. Drain, reserving liquid.
2. Use soaking liquid to cook 1 cup brown rice (adding water as necessary) according to package directions.
3. At the same time, boil wheat berries in 2 cups water until tender but still chewy (about 45 minutes). Undercook slightly for best texture.
4. While grains cook, dice the shiitakes (1/4-inch).
5. Combine cooked grains and mushrooms.
6. Add teriyaki sauce to taste (about 1/4 cup).
Note: Holds well covered in 350°F oven for serving.
