Bulgur Salad with Balsamic Vinegar

A simple make-ahead grain salad with carrots and balsamic vinegar.

Ingredients

1 cup uncooked bulgur wheat 2 cups vegetable broth 1/2-1 cup chopped carrots 2 tablespoons balsamic vinegar

Instructions

1. Heat vegetable broth to boiling. 2. Add bulgur and carrots. 3. Simmer about 10 minutes until broth is absorbed. 4. Chill completely. 5. When cold, stir in balsamic vinegar. 6. Store covered in refrigerator.
