Spicy stuffed zucchini with bulgur, lentils, and jalapeños. Protein-packed and delicious!
Ingredients
2 large zucchini
1 chopped onion
1/2 teaspoon basil
1 teaspoon dried marjoram
2 tablespoons chopped jalapeño peppers
2 grated carrots
1/2 cup red lentils
3 cups water
1 cup uncooked bulgur
Salt and pepper to taste
Sauce:
1 can crushed tomatoes
5 cloves crushed garlic
1 tablespoon chili powder
Instructions
1. Cut zucchini in half and scoop out center, leaving shell. Chop insides.
2. Sauté chopped zucchini with onion, marjoram, and basil until tender. Add jalapeños.
3. In separate pot, combine carrots, lentils, and water. Simmer 15 minutes.
4. Add bulgur, lower heat, simmer covered 10 minutes.
5. Remove from heat, let stand covered 10 minutes.
6. Combine with zucchini mixture. Stuff into shells.
7. Make sauce by combining tomatoes, garlic, and chili powder. Top stuffed zucchini.
8. Bake at 350°F for 45 minutes.
