A quick and easy version of French cassoulet using butter beans and Italian herbs.
Ingredients
1 onion, chopped
1 green pepper, chopped
Garlic to taste
3 cans butter beans, mostly drained
1/2 roll Gimme Lean sausage (optional)
2-3 small cans tomato sauce or 1 large can tomato juice
Oregano to taste
Fennel seed to taste
Thyme to taste
Sage to taste
Instructions
1. Sauté onions, pepper, garlic, and vegetarian sausage if using.
2. Season with oregano, fennel seed, thyme, and sage.
3. Add butter beans.
4. Pour in tomato sauce.
5. Simmer until heated through and flavors blend.
6. Serve hot.
