Cabbage and Rice Casserole

A hearty layered casserole with cabbage, toasted rice, and marinara sauce.

Ingredients

1 small head cabbage, shredded or chopped fine 1 large jar favorite spaghetti sauce 1 cup rice (white or brown) 1 cup water 1 cup sliced mushrooms

Instructions

1. Preheat oven to 350°F. 2. In a dry nonstick skillet, toast rice until brown in color. 3. Put half the rice in bottom of large casserole dish. 4. Layer half the cabbage on top. 5. Mix water and spaghetti sauce. 6. Pour half the sauce over cabbage. 7. Spread half the mushrooms on top. 8. Repeat all layers. 9. Bake about 1 hour until rice is tender and cabbage is cooked.
