Simple crustless quiche with summer squash and herbs. Perfect for using up garden zucchini!
Ingredients
1 lb summer squash (zucchini, yellow, or mixed), chopped
1/2 onion, thinly sliced
1 cup egg substitute (about 4 eggs worth)
1 1/2 - 2 cups grated fat-free cheese (cheddar or Swiss)
1/2 teaspoon each dried oregano and basil
Salt and pepper to taste
Instructions
1. Steam chopped squash and onion about 15 minutes in about 1 inch of water. Drain well.
2. Beat eggs and cheese together.
3. Mash squash (leave some chunks for texture).
4. Add squash to egg mixture.
5. Season with salt, pepper, oregano, and basil.
6. Pour into sprayed baking dish.
7. Bake covered at 325°F until set, about 30-40 minutes.
