Nutritious cookies packed with carrots and raisins. A wholesome treat you can feel good about.
Ingredients
1 1/4 cups whole wheat flour
1 cup quick cooking oats
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 cup prune butter
1/4 cup plus 2 tablespoons honey
3/4 cup finely grated carrots
1/3 cup golden raisins
Instructions
1. Preheat oven to 275°F.
2. Combine flour, oats, baking soda, and cinnamon.
3. Add prune butter, honey, and carrots. Stir to mix well.
4. Fold in raisins.
5. Coat baking sheet with nonstick spray.
6. Roll dough into 1-inch balls and place 1 1/2 inches apart.
7. Flatten cookies to 1/4 inch thickness using bottom of a glass dipped in sugar.
8. Bake about 18 minutes until golden brown.
9. Cool on pan 1 minute, then transfer to wire racks.
