A unique vegan brownie with hidden vegetables. The carrots add moisture and nutrition without changing the chocolate flavor.
Ingredients
1 cup shredded carrots
1 jar (4 oz) prune baby food
1/3 cup raspberry or strawberry butter
1/2 block silken tofu (lite)
1/2 cup white sugar
1/2 cup brown sugar
2 cups flour (1 cup whole wheat, 1 cup unbleached white)
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup cocoa powder
Instructions
1. Preheat oven to 350°F.
2. Blend carrots, prune baby food, fruit butter, tofu, and sugars until smooth.
3. In separate bowl, mix flour, baking soda, salt, and cocoa powder.
4. Add dry ingredients to wet mixture and stir until combined. Batter will be quite stiff.
5. Spread into prepared baking pan.
6. Bake for about 25 minutes or until toothpick comes out clean.
7. Cool before cutting.
