A delicious vegan pizza with sourdough crust topped with tofu, asparagus, and creamed corn. Carnivores won't believe it's cheese-free!
Ingredients
For Sourdough Crust:
3/4 cup sourdough starter
1 3/4 cups flour
1/4 cup cornmeal plus extra for pan
1 1/2 teaspoons salt (optional)
1 packet dry yeast
1/2 cup warm water (or beer for richer flavor)
For Topping:
3/4 cup fat-free tomato pizza sauce
1 block low-fat tofu, cubed
8-9 stalks asparagus
1 can creamed corn (no actual cream)
1 tablespoon prune puree
Italian spice mixture
Paprika
Instructions
1. Prepare crust: Use bread machine on dough mode (about 2 hours 35 minutes) or by hand with two 1-hour rises.
2. Spray pizza pan lightly with cooking spray.
3. Flatten dough, creating thick outer rim. Sprinkle with cornmeal.
4. Spread pizza sauce over dough.
5. Chop asparagus (discard fibrous ends) and distribute over sauce.
6. Partially drain creamed corn and spread on pizza.
7. Distribute tofu cubes evenly.
8. Dust with Italian spices and paprika.
9. Preheat oven to 400°F.
10. Bake about 20 minutes, watching carefully as ovens vary.
11. The aroma is incredible!
