Grilled stuffed zucchini with beans, cheese, and salsa. Perfect for camping or backyard BBQ!
Ingredients
4 medium zucchini
Salt and black pepper
2 garlic cloves, minced
1 1/2 cups cooked pinto or black beans, drained
3/4 cup grated fat-free cheddar cheese
1/3 cup store-bought salsa
1/4 cup finely chopped fresh cilantro
Nonstick cooking spray
Instructions
1. Prepare medium-hot fire in grill.
2. Slice zucchini in half lengthwise. Scoop out centers, leaving 1/4 inch flesh in shells.
3. Season with salt and pepper. Spray with cooking spray.
4. Combine beans, 1/2 cup cheese, salsa, and cilantro. Season with salt and pepper.
5. Stuff mixture into zucchini shells.
6. Sprinkle remaining 1/4 cup cheese on top.
7. Grill with lid down until zucchini is tender and stuffing is hot (10-12 minutes).
8. Carefully remove with spatula. Serve at once.
Variation: Use leftover chili as filling.
