Chili with Vegetables and Bulgur

A hearty, fiber-rich chili featuring bulgur wheat and yellow squash. From 500 Fat-Free Recipes.

Ingredients

1/4 cup water 1/2 cup onion, chopped 2 cloves garlic, minced 1/2 cup mushrooms, sliced 1 cup green bell pepper, chopped 1 tablespoon chili powder 1 teaspoon ground cumin 3 1/2 cups tomatoes, chopped (canned or fresh) 1/2 cup yellow squash, diced 2 cups cooked pinto beans, drained and rinsed 3/4-1 cup bulgur wheat

Instructions

1. Heat water in large nonstick saucepan over medium heat. 2. Add onion and garlic, cook and stir 5 minutes, adding more water if needed. 3. Add mushrooms, green pepper, chili powder, cumin, tomatoes and squash. 4. Cover and simmer for 15 minutes. 5. Add beans and bulgur. 6. Cover and cook until warmed through and bulgur is tender.
