Chilled Apricot-Pear Soup

Refreshing chilled fruit soup with warm spices and a hint of Grand Marnier. Perfect summer appetizer!

Ingredients

1 (16 oz) can apricot halves in juice 1 (16 oz) can pear halves in juice 1 (8 oz) carton vanilla fat-free yogurt 1/2 cup skim milk 2 tablespoons Grand Marnier or orange liqueur 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/8 teaspoon ground cloves Fresh apricot slices and mint sprigs for garnish (optional)

Instructions

1. Drain canned fruit, reserving 1 cup of juice. 2. Combine canned fruit, reserved juice, and next 6 ingredients in blender. 3. Cover and process 1 minute until smooth, stopping to scrape sides. 4. Cover and chill 2 hours. 5. Ladle into individual bowls. Garnish with fresh apricot slices and mint if desired.
