Creamy blueberry soup with Marsala wine. Can be a unique summer appetizer or low-fat dessert!
Ingredients
1 tablespoon cornstarch
2 cups cold water, divided
2 1/2 cups fresh blueberries
3 tablespoons sugar
1 1/2 cups Marsala wine
1/2 cup nonfat sour cream or yogurt
Instructions
1. Mix cornstarch with 1/4 cup cold water.
2. Combine blueberries, cornstarch mixture, remaining water, sugar, and wine in saucepan.
3. Cook over low heat until blueberries are soft, about 15 minutes.
4. Blend in blender or food processor until smooth.
5. Chill well in refrigerator.
6. Before serving, stir in sour cream or yogurt.
7. Ladle into chilled bowls.
