Chilled Cranberry Soup

Festive cranberry soup with cinnamon and cloves. Perfect for the holidays!

Ingredients

4 cups fresh cranberries (1 lb) 3 cups water 1 1/2 cups sugar 3 inches stick cinnamon 1/2 teaspoon ground cloves 2 tablespoons lemon juice 1 tablespoon finely shredded orange peel (no pith) Orange peel curl and mint for garnish (optional)

Instructions

1. Combine cranberries, water, sugar, cinnamon, and cloves in 3-quart saucepan. 2. Bring to boiling, reduce heat. 3. Simmer uncovered about 5 minutes until about half the berries have popped. 4. Remove from heat, stir in lemon juice and orange peel. 5. Cool. Cover and chill 4-24 hours. 6. Remove cinnamon stick before serving. 7. Ladle into soup bowls. Top with mint and orange peel if desired.
