Chocolate Angel Food Cake

A chocolatey twist on classic angel food cake, still virtually fat-free thanks to cocoa powder instead of chocolate.

Ingredients

1 3/4 cups egg whites (about 12 eggs) 1 1/2 teaspoons cream of tartar 1/4 teaspoon salt 1 1/2 cups granulated sugar 1 1/4 cups sifted cake flour 1/2 cup unsweetened cocoa powder 2 teaspoons vanilla extract 3/4 teaspoon almond extract

Instructions

1. Preheat oven to 350°F. 2. Combine egg whites, cream of tartar and salt in large bowl. 3. Beat to very soft peaks. 4. Turn mixer to lowest speed and gradually add sugar, 1 teaspoon at a time. 5. Sift flour with cocoa powder. Add to egg whites, 1 teaspoon at a time. Do not overmix. 6. Fold in vanilla and almond extract. 7. Transfer to ungreased angel food cake pan. 8. Bake on bottom rack 45-50 minutes until done. 9. Invert pan and let cool completely.
