A clever way to use garden zucchini! These moist brownies hide the veggies completely in rich chocolate flavor.
Ingredients
2 to 2 1/2 cups grated zucchini
1/2 cup mashed ripe banana (about 1 medium)
1 tablespoon water
2 teaspoons vanilla
2 cups flour (1 cup whole wheat, 1 cup unbleached white)
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup cocoa powder
2/3 cup sugar
Instructions
1. Preheat oven to 350°F.
2. In large bowl, mix zucchini, banana, water, and vanilla.
3. In separate bowl, combine flour, baking soda, salt, cocoa, and sugar.
4. Fold dry ingredients into wet mixture. Batter will be stiff.
5. Spread into nonstick 7x13 inch brownie pan.
6. Bake 25-35 minutes until toothpick comes out clean.
7. Cool before cutting.
