Classic Mushroom Risotto

Creamy, elegant mushroom risotto with sherry. Perfect texture every time!

Ingredients

6 oz fresh mushrooms, finely sliced 2 tablespoons finely chopped parsley 4 cups low-fat vegetable broth 1 small onion, finely chopped 1/2 cup sherry or white wine 10 oz arborio risotto rice Salt and black pepper (optional)

Instructions

1. In heavy frying pan, stir sliced mushrooms with a little water until they start browning. Stir in parsley, cook 30 seconds more. Remove to side dish. 2. In same pan, stir onions with water until soft. 3. Add rice, stir for a minute. Add mushrooms, mixing well. 4. Pour in wine, cook over moderate heat until it evaporates. 5. Pour broth a little at a time, making sure rice absorbs liquid before adding more. 6. Cook over low heat for 25-30 minutes, stirring often. 7. Let risotto rest 3-4 minutes before serving.
