Classic Three Bean Salad

A refreshing 3-bean salad with kidney beans, black beans, and chickpeas in a light honey-lemon dressing. Great for cookouts.

Ingredients

1 can (15 oz) kidney beans, rinsed and drained 1 can (15 oz) black beans, rinsed and drained 1 can (15 oz) chickpeas (garbanzo beans), rinsed and drained 1/2 red onion, finely diced 1 bell pepper, diced 1/4 cup fresh parsley, chopped 3 tablespoons lemon juice 2 tablespoons apple cider vinegar 1 tablespoon honey or maple syrup 1/2 teaspoon garlic powder Salt and pepper to taste

Instructions

1. Rinse and drain all beans. 2. Combine beans, onion, bell pepper, and parsley in a large bowl. 3. Whisk together lemon juice, vinegar, honey, garlic powder, salt and pepper. 4. Pour dressing over beans and toss to coat. 5. Refrigerate at least 1 hour before serving for best flavor. 6. Will keep refrigerated up to 5 days.
