Classic Vegetable Stuffing

Moist and sticky stuffing loaded with vegetables. Customize with Italian sausage or apples!

Ingredients

1 cup chopped onions 1/2 cup pureed onions 2 cups chopped celery 1 cup pureed celery 1 cup chopped or grated carrots 1 lb fresh mushrooms (or 8 oz canned), sliced 2 tablespoons dried parsley 1 teaspoon poultry seasoning (or more to taste) Ground black pepper to taste Ground sage to taste 1 large bag unseasoned bread stuffing cubes 1-2 cups vegetable broth

Instructions

1. Heat onions, celery, carrots, mushrooms, and spices in large pot until boiling. 2. Simmer 5-10 minutes until onions are translucent. 3. Cool 10 minutes, then add stuffing mix. 4. Mix well, adding vegetable broth as needed for moisture. 5. Place in large covered baking dish. 6. Bake at 350°F for 30 minutes. 7. Remove cover during last 10-15 minutes for crusty top. Variations: Add vegetarian Italian sausage (browned first), chopped apples, or chopped spinach.
