Wheat-free microwave lunch with corn pasta, fresh tomatoes, and mushrooms.
Ingredients
1-2 cups corn pasta, pre-cooked
1-2 cups chopped Roma tomatoes (or canned)
Salt and pepper to taste
Oregano, parsley, chives to taste
6-12 mushrooms, chopped
Instructions
1. At home, pre-cook corn pasta (needs longer cooking time and more water than regular pasta).
2. Put pasta into lunch container.
3. Add chopped tomatoes, spices, and mushrooms.
4. At work, microwave until heated through.
