Cornbread Stuffing with Seitan

Hearty cornbread stuffing with savory seitan chunks. Perfect for Thanksgiving!

Ingredients

1 batch cornbread (from Arrowhead Mills mix - use egg substitute, eliminate fat) 3 cloves garlic, minced 1 large onion, chopped 3-6 stalks celery, chopped Red pepper (optional) 1 1/2 teaspoons dried sage (or to taste) 1/2 cup vegetarian chicken-flavored broth 1 lb seitan, chopped in 1-inch cubes

Instructions

1. Make cornbread according to mix directions, using egg substitute and omitting fat. 2. Sauté vegetables in small amount of liquid until softened. 3. Crumble up cornbread into large bowl. 4. Add sautéed veggies and sage. 5. Moisten with 1/2 cup vegetarian chicken-flavored broth. 6. Add chopped seitan cubes and mix well. 7. Bake at 350°F with whatever else you're baking for about 35 minutes.
