Ingredients
For Yeast Mixture:
1 packet dry-active yeast
1/4 cup tepid water (not over 110°F)
1/8 teaspoon sugar
Additions:
1 tablespoon non-fat dry milk
1/4 cup water
Dry Ingredients:
1 cup all-purpose flour
1/3 cup cornmeal
1/4 teaspoon salt
Instructions
1. Mix yeast, tepid water, and sugar. Let proof until bubbly, about 5 minutes.
2. Whisk non-fat dry milk and additional water into yeast mixture.
3. Combine flour, cornmeal, and salt in a bowl.
4. Add wet ingredients to dry and mix to form dough.
5. Knead until smooth and elastic.
6. Let rise until 1 1/2 times original size.
7. Pat down, fold in thirds, let rise again until more than doubled.
8. Gently shape into 12-14 inch disk about 1/4 inch thick.
9. Add your favorite toppings.
10. Bake at 450-500°F until crust is golden and crispy.
