Elegant couscous pilaf with red pepper and fresh herbs, served with saffron cream sauce.
Ingredients
Pilaf:
2/3 cup diced red bell pepper
1/3 cup chopped onion
1/4 cup diced celery
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
2 tablespoons fresh thyme (or 4 tablespoons fresh mint)
Salt and pepper to taste
1 1/2 cups uncooked couscous
3 cups vegetable stock
Saffron Cream:
1 cup non-fat cream cheese
2/3 cup non-fat yogurt
2 pinches crushed saffron threads
Instructions
Pilaf:
1. In small amount of water, sauté pepper, onions, and celery until crisp-tender.
2. Add cayenne and cinnamon, stir in.
3. Pour in stock and bring to a boil.
4. Stir in couscous, cover and remove from heat.
5. Let sit 10-15 minutes until liquid is absorbed.
6. Season with salt, pepper, and herbs.
Saffron Cream:
1. Blend cream cheese, yogurt, and saffron in food processor.
2. Serve alongside pilaf with wild greens salad.
