A tangy, aromatic chutney recipe.
Ingredients
I got this recipe from a friend, and adapted it (she makes it with
walnuts). This is the best cranberry relish/chutney I've ever had. It's
a bit on the sweet side. Next time I'll try it with half the sugar, and
see if it's still OK.
Cranberry Chutney
1 16-oz. package cranberries
2 cups sugar (I'll try one cup next time)
1 cup water
1 cup orange juice
1 cup golden raisins
1 cup chopped celery
1 medium apple, chopped
1 Tbsp. grated orange peel
1 tsp. ground ginger
In a 3-quart saucepan, over medium heat, heat cranberries, sugar, and 1
cup water to boiling, stirring frequently.
Reduce heat to low.
Simmer 15 minutes.
