Cranberry Mushroom Stuffing

Festive stuffing with dried cranberries and lots of mushrooms. Can be baked in a pumpkin!
Ingredients
2 loaves bread, cubed
2 egg equivalents
8 cups mushrooms, sliced
2 large onions, chopped
5 cloves garlic, chopped
6 stalks celery, sliced
1 tablespoon or more poultry seasoning
1 cup dried cranberries (or more)
1 1/2 cups veggie broth (approximate)
Salt and pepper to taste
Instructions
1. Cook mushrooms, onions, garlic, and celery in nonstick wok until celery is tender.
2. Add bread, egg equivalents, poultry seasoning, cranberries, and salt/pepper.
3. Add only enough broth to make it reasonably moist (not soupy).
4. Microwave a small amount to check seasoning. Adjust to taste.
5. Stuff into casserole. Bake like custard in larger pan of water until center is firm.
Alternative: Bake in a pumpkin set in pan with about 1 inch of water.
