Addictive crunchy chickpeas with Middle Eastern spices. Healthy snacking!
Ingredients
2 cups cooked chickpeas, drained and blotted dry
1/2 teaspoon salt (reduce for canned beans)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Instructions
1. Preheat oven to 400°F.
2. Make sure chickpeas are very dry (blot with paper towels).
3. Toss chickpeas with all seasonings.
4. Spread on nonstick baking sheet.
5. Bake 30-40 minutes until golden brown and crisp.
6. Shake pan occasionally for even browning.
7. Let cool completely (they crisp up more as they cool).
8. Store in airtight container.
