Curried Bean Burgers

Spiced kidney bean patties with curry and carrots for binding. Kid-approved!

Ingredients

2 cups cooked kidney beans (from dried) 1 teaspoon curry powder 4 tablespoons cornstarch 4 tablespoons cornmeal 1 onion, minced 4 cloves garlic, minced 1 tablespoon black pepper 2 carrots, grated (acts as binder) 2 tablespoons vegetarian beef bouillon (optional) 1 tablespoon soy sauce (optional) 2 egg whites (optional, for binding)

Instructions

1. Cook and mash the kidney beans. 2. Add all spices, cornstarch, cornmeal, onion, garlic, and carrots. 3. Add bouillon and/or soy sauce if using. 4. Mix well and form into thin patties. 5. Fry in nonstick pan until browned on both sides. 6. Serve on buns with condiments.
