A creamy curried couscous salad with vegetables and chickpeas.
Ingredients
1 package couscous (about 6 cups prepared)
3 tablespoons vegetable chicken broth powder
1-3 cups chopped celery
1/2 cup chopped green onions
1 (16 oz) can chickpeas, drained
Chopped vegetables as desired (tomato, cucumber, peppers)
1 1/2 teaspoons turmeric
1 teaspoon curry powder
1/4 cup fat-free mayonnaise or dressing
Instructions
1. Cook couscous according to package directions using broth powder in water.
2. Let cool.
3. Add celery, green onions, chickpeas, and other vegetables.
4. Mix in turmeric and curry powder.
5. Add just enough fat-free mayo to moisten.
6. Let set overnight to mingle flavors.
7. Serve chilled.
