Curried Rice, Beans and Greens Pilaf

One-pot Indian-inspired pilaf with curry, kidney beans, collard greens, and sweet potato.

Ingredients

1/3 cup Major Grey's mango chutney 2 cups vegetable broth 1 red bell pepper, diced 4 cloves garlic, minced 1 cup long grain rice 1 tablespoon Madras curry powder 1 (15 oz) can kidney beans, drained and rinsed 1 small sweet potato (yam), peeled and cubed 1 (10 oz) package frozen chopped collard greens 1/2 cup dried currants Plain soy yogurt for serving (optional)

Instructions

1. Puree broth and chutney in blender. Set aside. 2. Sauté bell pepper and garlic in small amount of water until softened. 3. Add rice and curry powder, stir for 1 minute. 4. Add frozen collards, stir until thawed through. 5. Add beans, sweet potato, and currants. Stir to blend. 6. Add broth mixture. Bring to simmer. 7. Cover and cook until rice and sweet potatoes are done (about 20 minutes). 8. Check at 15 minutes, add water if needed. 9. Serve with soy yogurt if desired.
