A hearty Chicago-style deep dish pizza loaded with caramelized onions, spinach, and fresh tomatoes. Inspired by The Frugal Gourmet.
Ingredients
For Crust:
2 1/2 cups whole wheat flour
1 package fast rising yeast
1 teaspoon salt
1 teaspoon sugar
1 cup very warm water
For Filling:
1 package reduced-fat shredded pizza cheese
2 cans whole tomatoes, drained and broken up
Handful of fresh basil leaves, chopped
Black pepper, salt, oregano to taste
4-5 large cloves garlic, minced
1 very large onion, thinly sliced
2 packages (10 oz each) frozen spinach, thawed
1 fresh tomato, thinly sliced
Red wine for sautéing
Instructions
1. For crust: Combine yeast, salt, sugar, 1 cup flour, and warm water. Mix well.
2. Add remaining flour to form soft dough. Knead briefly.
3. Cover and let rise while preparing vegetables.
4. Sauté onions in red wine until caramelized.
5. Squeeze moisture from thawed spinach.
6. Break up canned tomatoes and drain well (save juice for another use).
7. Preheat oven to 400°F.
8. Press dough into deep dish pizza pan, bringing up sides.
9. Layer: cheese, spinach, caramelized onions, garlic, drained tomatoes, basil, and fresh tomato slices.
10. Season with salt, pepper, and oregano.
11. Bake until crust is golden and filling is bubbly.
