Easy Pasta Salad

Colorful vegetable pasta salad - don't skip the red pepper for its wonderful sweetness!

Ingredients

1 lb tri-color corkscrew pasta 1 bunch broccoli, cut into florets 2 carrots, peeled and sliced thinly 1 small red pepper, cut into 1-inch pieces 1 cucumber, peeled, halved, and sliced thin 1-2 green onions, thinly sliced 1 bottle fat-free Italian dressing

Instructions

1. Cook pasta, drain, and rinse with cold water. 2. Cut broccoli into florets and microwave for 1 minute (or blanch briefly). 3. Rinse broccoli with cold water. 4. Put pasta, broccoli, and remaining vegetables in a big bowl. 5. Chill well. 6. Just before serving, pour dressing over pasta and vegetables. Stir well.
