A quick microwave-friendly pasta dish with tender eggplant and tomatoes.
Ingredients
50g (2 oz) noodles (rice or mung bean)
200g (7 oz) eggplant (about 2/3 medium), cubed
1/4 red bell pepper, seeded and chopped (optional)
Celery salt, black pepper, dried basil, garlic powder to taste
1/2 can (7 oz) chopped tomatoes
Instructions
1. Cook noodles according to package directions. Drain.
2. Chop eggplant into 1/2-inch cubes. Chop red pepper if using.
3. Mix vegetables in a microwavable bowl.
4. Season with celery salt, black pepper, basil, and garlic powder. Mix again.
5. Spread tomatoes on top of vegetables, then add noodles.
6. Microwave on HIGH until vegetables are done (about 8 minutes in 800W microwave).
7. Excess liquid will evaporate without overcooking noodles.
8. Mix well and serve.
