Eggplant and Tomatoes over Rice Noodles

Asian-inspired microwave lunch with soft eggplant and glass noodles.

Ingredients

1 eggplant, cubed into 1/4-1/2 inch cubes 1 can tomatoes (whole, chopped) 1/2 package rice noodles (glass noodles), pre-cooked Salt (optional)

Instructions

1. In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. 2. Microwave on high for 10 minutes or until eggplant is to taste. 3. Mix everything together and enjoy. Variation: Use sticky rice instead of noodles.
