I have never seen fatfree feta in stores, but I have a recipe for fake
feta made from tofu. It would not be completely fatfree because tofu is
not fatfree, but if you use lowfat tofu it is a considerable improvement
over regular feta. The recipe states that using lowfat tofu still gives
great results.

1 lb. extra-firm regular or silken tofu
1 cup water
1/2 cup light miso

2 tablespoons lemon juice or white wine vinegar
1 teaspoon salt
Cut the tofu into slices or cubes. Combine the remaining ingredients to
make a marinade, and pour over the tofu.
Keep this refrigerated in a covered jar for up to three weeks, shaking
the jar every day. Use in salads or sandwiches.
