A simple one-bowl apple cake that's naturally fat-free. Use any seasonal fruit like cherries for variation.
Ingredients
2-3 cups hot cooked apples or cherries
2 tablespoons sugar
2 egg whites
4 tablespoons boiling water
1 cup flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
Instructions
1. Preheat oven to 350°F.
2. Pour hot fruit into a casserole dish.
3. In a bowl, combine sugar, egg whites, and boiling water. Mix well.
4. Add flour, salt, and baking powder. Stir until combined.
5. Pour batter over the fruit.
6. Bake for about 30 minutes until golden and set.
7. Serve warm, plain or with a dollop of fat-free yogurt.
