Rich, creamy chocolate pie made with skim milk and cocoa. A chocolate lover's dream!
Ingredients
1 1/2 cups sugar
6 tablespoons cocoa
1/3 cup plus 1 teaspoon cornstarch
1/2 teaspoon salt
1 1/2 cups skim milk
1 1/2 cups canned evaporated skim milk
3 egg substitute equivalents, lightly beaten
1/2 tablespoon vanilla
1 prepared pie crust of choice
Instructions
1. Mix sugar, cocoa, cornstarch, and salt in saucepan.
2. Gradually add both milks over medium heat.
3. Stir constantly for 15-30 minutes until mixture boils.
4. Let boil 1 minute, stirring constantly.
5. Add half the mixture to beaten eggs, stir well.
6. Return to saucepan and boil 1 more minute.
7. Remove from heat and add vanilla.
8. Pour into prepared pie crust.
9. Place wax paper directly on filling to prevent cracking.
10. Refrigerate 2-48 hours.
11. Serve with fat-free whipped topping if desired.
