Free-Form Apple Raisin Pie

A rustic pie with a yeasted pastry crust that's rolled out flat with the edges folded up around the filling.

Ingredients

For Pastry: 1/2 cup warm soy milk 3 tablespoons mashed potatoes 1 tablespoon maple syrup 1 teaspoon active dry yeast 1/4 cup whole wheat flour 1/2 teaspoon salt 2 tablespoons frozen apple juice concentrate 1 cup unbleached flour For Filling: 8 Granny Smith apples, chopped 1/4-1/2 cup raisins Lemon juice and zest Cinnamon and nutmeg to taste 1 tablespoon cornstarch 1/2 cup apple juice concentrate

Instructions

1. Mix soy milk, potatoes, syrup, and yeast. Let stand 5 minutes. 2. Add salt and flours. Knead 5 minutes. Let rise until doubled, about 1 hour. 3. Roll dough into 16-inch round on baking sheet. 4. Mix filling ingredients and place in center. 5. Fold edges of pastry up around filling, leaving 5-inch opening in center. 6. Cover opening with foil. 7. Bake at 350°F for 25 minutes. 8. Brush pastry with apple juice and bake 5 more minutes until golden. 9. Serve warm, room temperature, or cold.
