A unique chili featuring pumpkin and red bulgur wheat. Makes a large batch perfect for meal prep.
Ingredients
28 oz crushed tomatoes
2 cans (16 oz each) pinto or red kidney beans (or 2-2.5 cups dried, soaked and cooked)
1 can (16 oz) solid pack pumpkin
1 cup onion, chopped
1 cup red bell pepper, chopped
2/3 cup uncooked red bulgur wheat
1 can (4 oz) chopped green chilies
2 1/2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon minced garlic
1 teaspoon salt
4 cups water
Instructions
1. In large pan, combine 4 cups water and all ingredients.
2. Bring to a boil.
3. Reduce heat and simmer uncovered 30-35 minutes or until bulgur is tender.
4. Serve with light sour cream, shredded fat-free cheddar, or sliced green onions.
