Greek Cabbage and Rice Pilaf

Mediterranean-style rice pilaf with cabbage. Simple comfort food made in a rice cooker!

Ingredients

1 cup long grain rice 2 cups vegetable broth 2 cups shredded cabbage 1 medium onion, diced 2 cloves garlic, minced 1 teaspoon dried dill (or 1 tablespoon fresh) 1/2 teaspoon salt 1/4 teaspoon pepper Juice of 1/2 lemon

Instructions

1. Combine all ingredients except lemon juice in rice cooker. 2. Cook until rice cooker shuts off. 3. Fluff with fork and stir in lemon juice. 4. Let stand 5 minutes before serving. Note: Can also be made on stovetop - bring to boil, reduce heat, simmer covered 20-25 minutes.
