Elegant lasagna with grilled zucchini and homemade roasted red pepper sauce. Company-worthy!
Ingredients
Sauce:
4 large red bell peppers, roasted and peeled
1 onion, chopped
3 cloves garlic, crushed
3/4 cup bread crumbs
1 tablespoon balsamic vinegar
1/4 teaspoon saffron (or turmeric)
2/3 cup vegetable broth
Salt, pepper, cayenne to taste
Lasagna:
6 medium zucchini
9 lasagna noodles, cooked
20 basil leaves
Olive oil spray
Instructions
Sauce:
1. Roast, peel, and core peppers (broiling works well).
2. Cook onion and garlic until soft.
3. Puree peppers, onion mixture, and bread crumbs in food processor.
4. Add vinegar, saffron, and enough broth for thick sauce consistency.
5. Season highly with salt, pepper, and cayenne.
Lasagna:
6. Cut zucchini lengthwise into 1/4" slices. Grill or broil until limp.
7. Preheat oven to 350°F. Spray 8x11" pan with olive oil spray.
8. Layer: 3 noodles, 1/3 zucchini, 1/4 basil, 1/3 sauce.
9. Repeat for second and third layers.
10. Bake 30-40 minutes until thoroughly heated.
