Robust lasagna with spinach, mushrooms, and olives. Appeals to everyone!
Ingredients
8-10 lasagna noodles, cooked and rinsed
16 oz fresh spinach (or 2 boxes frozen leaf spinach)
2 cloves garlic, minced
2 cups sliced fresh mushrooms
1 cup grated carrot
1 cup chopped onion
1/2 cup sliced ripe olives
2-3 tablespoons fresh parsley
1 (8 oz) can tomato sauce
1 (6 oz) can tomato paste
14-16 oz crushed tomatoes
1 teaspoon each dried oregano and basil
8 oz each fat-free cottage and ricotta cheese
1-2 teaspoons grated lemon peel (optional)
16 oz grated fat-free mozzarella
Fat-free Parmesan
Instructions
1. Cook spinach in small amount of liquid until wilted. Set aside.
2. Sauté garlic briefly, add onions, carrots, mushrooms, herbs, and parsley. Cook until tender.
3. Add all tomato products and olives. Cook 5-8 minutes over low heat.
4. Lightly oil 13x9x2" dish. Spread tiny amount of sauce on bottom.
5. Using half ingredients, layer: noodles, cottage/ricotta mixture, spinach, grated cheese, sauce.
6. Repeat for second layer.
7. Sprinkle Parmesan on top.
8. Bake at 375°F for 30-35 minutes.
9. Let set 10 minutes before serving. Freezes well.
